Job Description:

1. Culinary Leadership & Talent Development

  • Team Mentorship: Train, develop, and motivate supervisors and culinary staff to exceed food preparation standards. Identify developmental needs and provide hands-on coaching in cooking fundamentals and plate presentation.

  • Recipe Discipline: Teach preparation according to well-defined recipes and continuously refine the cuisine.

  • Recruitment & Culture: Interview and hire top-tier talent while providing a positive work environment. Counsel and provide individual coaching to empower subordinates to accept responsibility and meet defined goals.

2. Operational Excellence & Food Safety

  • Daily Direction: Provide strategic direction for all day-to-day kitchen operations. Review staffing levels daily to balance operational needs with guest service and financial targets.

  • Quality Control: Frequently review finished products for quality and presentation before they reach the guest. Monitor grooming, hygiene, and strict adherence to food handling and sanitation standards.

  • Technical Maintenance: Ensure all kitchen equipment is properly maintained and functional. Enforce all safety procedures for both kitchen staff and food servers.

3. Financial & Supply Chain Management

  • Menu Engineering: Lead menu development and maintain 100% accurate costing for all dishes.

  • Procurement: Coordinate with the purchasing department for the acquisition of food items and ensure proper receiving and food storage standards.

  • Cost Accountability: Review and discuss daily food cost reports with the F&B team. Manage weekly and monthly schedules to align with forecasts and budgets.

  • Business Integrity: Advocate for sound financial decision-making and lead with honesty and integrity.

4. Guest Experience & Quality Assurance

  • Aesthetic Standards: Determine food presentation styles and create decorative food displays. Ensure products consistently meet departmental quality and appearance benchmarks.

  • Guest Interaction: Engage with guests to obtain direct feedback on food quality and presentation. Proactively handle and resolve guest problems or complaints.

  • Administrative Presence: Attend daily morning meetings and administrative sessions to align culinary goals with broader company objectives.

Requirements:

  • Business Acumen: Strong understanding of P&L, food costing, and labor management.

  • Leadership: Exceptional communication and interpersonal skills with a "lead-by-example" approach.

  • Flexibility: Ability to work under pressure and adapt to changing guest volumes and operational needs.

Qualifications and Skills:

  • Experience: Proven experience as an Executive Chef or Head Chef in a high-volume, premium environment.

  • Skills: Expert knowledge of various cooking methods, ingredients, and sanitation procedures.

Salary

₦100,000 - ₦150,000/month
