Job Description:
Bourdillon Hotel & Apartment is looking for an experienced, creative, and highly skilled Head Chef to take full command of our culinary operations. As the leader of our kitchen, you will define our food identity, ensuring that every dish served meets the highest standards of taste, presentation, and consistency. We are seeking a culinary leader who balances creative flair with the strict discipline required for food cost control, safety compliance, and team management.
Requirements:
Culinary Leadership: Lead and inspire the kitchen team, ensuring seamless communication and high performance during service.
Menu Development: Design innovative and diverse menus that feature a perfect blend of local and international cuisines to appeal to our guest demographic.
Operational Management: Oversee all kitchen activities, including food preparation, inventory management, and equipment maintenance.
Cost Control: Meticulously manage food costs, minimize wastage, and negotiate with suppliers to maintain profitability without compromising quality.
Hygiene & Compliance: Serve as the ultimate authority on food safety. Ensure all kitchen operations strictly adhere to local and international health, safety, and hygiene regulations.
Quality Assurance: Maintain rigorous standards for food quality, plating, and portion control.
Training & Mentorship: Foster a culture of learning by training junior kitchen staff on culinary techniques, kitchen etiquette, and safety protocols.
Qualifications and Skills:
Experience: Proven professional track record as a Head Chef or Senior Chef in a reputable hotel or restaurant environment.
Technical Expertise: Deep, hands-on knowledge of both local Nigerian delicacies and international culinary trends.
Kitchen Management: Demonstrated ability to manage high-pressure service environments, control costs, and maintain food quality standards.
Safety Proficiency: Comprehensive understanding of food safety management systems (HACCP or similar).
Leadership Traits:
Strong ability to build, lead, and motivate a diverse team of chefs and kitchen assistants.
Meticulous attention to detail regarding food costing and kitchen workflows.
