Job Description:

Strategic Planning and Concept Development:

  • Define the eatery’s business concept, vision, and target market.
  • Conduct feasibility studies, competitor analysis, and location assessments.
  • Develop the business plan, operational strategy, and financial projections.

Project Coordination and Execution:

  • Oversee all phases of the set-up — from site selection, renovation, and kitchen layout design to equipment installation.
  • Coordinate with architects, contractors, suppliers, and regulatory bodies to ensure timely completion.
  • Approve procurement of furniture, fixtures, and kitchen equipment within budget.

Staffing and Human Resource Development:

  • Recruit key staff (chefs, kitchen hands, service staff, supervisors, and admin team).
  • Develop job descriptions, training manuals, and performance standards.
  • Supervise training to ensure staff understand the eatery’s service culture and operational standards.

Regulatory Compliance and Licensing:

  • Ensure compliance with health, safety, food handling, and business registration requirements.
  • Liaise with government agencies to obtain all necessary permits and approvals.

Financial Management:

  • Manage the set-up budget and ensure optimal resource utilization.
  • Approve expenditures and monitor supplier payments.
  • Set pricing structures and oversee initial menu costing with the chef.

Branding, Marketing, and Launch Preparation:

  • Oversee branding, logo design, signage, and customer experience concepts.
  • Collaborate with the marketing team to plan pre-launch promotions.
  • Coordinate the grand opening and ensure a smooth operational take-off.

Operational Readiness and Handover:

  • Conduct pre-opening audits and test runs.
  • Establish Standard Operating Procedures (SOPs) for front and back-of-house operations.
  • Ensure seamless transition from set-up to full operations before handover to the operations manager.

Leadership and Reporting:

  • Lead and motivate cross-functional teams to achieve project milestones.
  • Report progress, challenges, and recommendations to the company’s board or managing director.

Requirements:

  • Must have previously worked in top management positions with reputable brands such as The Place, Mega Chicken, or Chicken Republic.
  • Proven experience in setting up and managing successful eateries.
  • Strong leadership, communication, and project management skills.
