Job Description:
Strategic Planning and Concept Development:
- Define the eatery’s business concept, vision, and target market.
- Conduct feasibility studies, competitor analysis, and location assessments.
- Develop the business plan, operational strategy, and financial projections.
Project Coordination and Execution:
- Oversee all phases of the set-up — from site selection, renovation, and kitchen layout design to equipment installation.
- Coordinate with architects, contractors, suppliers, and regulatory bodies to ensure timely completion.
- Approve procurement of furniture, fixtures, and kitchen equipment within budget.
Staffing and Human Resource Development:
- Recruit key staff (chefs, kitchen hands, service staff, supervisors, and admin team).
- Develop job descriptions, training manuals, and performance standards.
- Supervise training to ensure staff understand the eatery’s service culture and operational standards.
Regulatory Compliance and Licensing:
- Ensure compliance with health, safety, food handling, and business registration requirements.
- Liaise with government agencies to obtain all necessary permits and approvals.
Financial Management:
- Manage the set-up budget and ensure optimal resource utilization.
- Approve expenditures and monitor supplier payments.
- Set pricing structures and oversee initial menu costing with the chef.
Branding, Marketing, and Launch Preparation:
- Oversee branding, logo design, signage, and customer experience concepts.
- Collaborate with the marketing team to plan pre-launch promotions.
- Coordinate the grand opening and ensure a smooth operational take-off.
Operational Readiness and Handover:
- Conduct pre-opening audits and test runs.
- Establish Standard Operating Procedures (SOPs) for front and back-of-house operations.
- Ensure seamless transition from set-up to full operations before handover to the operations manager.
Leadership and Reporting:
- Lead and motivate cross-functional teams to achieve project milestones.
- Report progress, challenges, and recommendations to the company’s board or managing director.
Requirements:
- Must have previously worked in top management positions with reputable brands such as The Place, Mega Chicken, or Chicken Republic.
- Proven experience in setting up and managing successful eateries.
- Strong leadership, communication, and project management skills.
