Job Description:

We are seeking a high-caliber Food & Beverage Manager with a proven track record of excellence in the 4 or 5-star hotel sector. You will lead our F&B department as a strategic business unit, overseeing everything from fine dining and open bar operations to kitchen management and procurement. This role requires a sophisticated blend of financial acumen, culinary vision, and leadership. You will be responsible for driving revenue through innovative marketing, maintaining uncompromising safety and quality standards, and mentoring a world-class service team to deliver an exceptional guest experience.

Requirements:

1. Strategic Financial & Marketing Management

  • Profitability Design: Formulate and implement financial, costing, and marketing policies to drive F&B sales and maximize departmental profit.

  • Cost Control: Manage the "Three Elements of Cost"—Food Cost, Labor Cost, and Overheads—ensuring waste is minimized without compromising quality.

  • Promotional Activity: Design and execute creative sales promotions and seasonal menus that reflect current global culinary trends and guest preferences.

2. Operational Excellence & Quality Control

  • Departmental Oversight: Directly supervise the kitchen, service areas, stores, stewarding, and the culinary team (Chefs) to ensure a seamless "Heart of House" to "Front of House" flow.

  • Service Standards: Maintain the predetermined 5-star quality of dishes and service delivery, ensuring every guest interaction meets elite hospitality benchmarks.

  • Bar & Restaurant Management: Oversee the specialized operations of open bars and multiple restaurant outlets, ensuring optimized inventory and atmospheric standards.

3. Leadership, Training & Compliance

  • Talent Management: Appoint the right personnel for specialized roles and maintain a high-performance culture through regular mentorship.

  • Training & Development: Schedule and enforce rigorous training programs to keep staff updated on the latest trends, service etiquette, and culinary techniques.

  • Health & Safety: Implement and enforce strict health, safety, and hygiene protocols to ensure 100% compliance with international and local regulations.

  • Reporting: Utilize technology to prepare and present detailed daily, weekly, and monthly departmental performance reports to executive management.

Qualifications and Skills:

Experience & Industry Background

  • Current Status: MUST have worked or be presently working as an F&B Manager in a 4-star or 5-star hotel.

  • Expertise: Deep knowledge of Open Bar and Restaurant Management within a luxury context.

  • Technical Literacy: Full computer literacy with the ability to manage F&B software and prepare data-driven reports.
