Job Description:
Bourdillon Hotel and Apartment is seeking a strategic and high-energy Food and Beverage (F&B) Manager to lead our dining and banquet operations. As a premier hospitality establishment, our reputation rests on the quality of our cuisine and the seamlessness of our service. You will be responsible for the entire F&B lifecycle—from menu engineering and procurement to staff mentorship and guest relations. Requirements:
1. Operational Excellence & Menu Engineering
Daily Oversight: Command all F&B outlets, including the main restaurant, bar, and in-room dining, ensuring every service meets our premier standards.
Trend Integration: Develop and refresh menus that align with current culinary trends, seasonal availability, and guest preferences to keep the dining experience vibrant.
Collaboration: Partner with the Executive Chef and Housekeeping to ensure that dining environments and food presentation are impeccable.
2. Financial Stewardship & Inventory Control
Cost Management: Implement strict food and beverage cost-control measures to maximize profitability without compromising on quality.
Procurement: Oversee relationships with vendors, manage high-value inventory, and ensure that procurement schedules align with occupancy and event forecasts.
Resource Optimization: Monitor wastage and implement "zero-waste" initiatives within the kitchen and bar operations.
3. Team Leadership & Guest Satisfaction
Talent Development: Recruit, train, and mentor a multidisciplinary team of servers, bartenders, and supervisors, fostering a culture of professional growth and hospitality.
Service Standards: Enforce rigorous hygiene and safety protocols in line with local and international food safety regulations.
Guest Relations: Actively engage with diners to gather feedback, resolve complaints instantly, and ensure every guest leaves with a memorable impression.
Qualifications and Skills:
Experience & Expertise
Proven Tenure: Significant managerial experience in Food and Beverage within the hotel or luxury apartment industry.
Technical Knowledge: Deep understanding of food safety regulations (HACCP), wine pairings, and contemporary mixology.
Systems Proficiency: Hands-on experience with Point of Sale (POS) systems and inventory management software.
Core Competencies
Leadership: Exceptional ability to lead a diverse team under high-pressure, high-volume environments.
Communication: Strong interpersonal skills to navigate guest interactions and inter-departmental briefings.
Agility: Ability to multitask and adapt to changing guest volumes and special event requirements.
