Job Description:
We are seeking a high-velocity and creatively elite Pastry Chef (Commis) to anchor the dessert engine of our Lagos hotel operations. In the specialized landscape of luxury hospitality, success is defined by "Confectionery Sovereignty", the ability to harmonize high-volume baking with the clinical precision required for Decorative Centerpieces, Portion Control, and Recipe Fidelity. This role is designed for a "Culinary Architect" with 2+ years of experience who can blend "Technical Grit" (preparing complex pastries and desserts according to established recipe cards) with the "Operational Agility" required to supervise sections and conduct on-the-job training in the absence of the Pastry Chef.
Requirements:
1. Production Orchestration & Recipe Governance
Baked-Goods Sovereignty: Supervise and prepare all pastries and desserts in accordance with established recipe cards, acting as the primary "Source of Culinary Quality."
Fidelity Architecture: Assist the Pastry Sous Chef in maintaining the Recipe and Photo Album ("Cooking with Style"), providing the "Structural Foundation" for consistent brand aesthetics.
Supply Stewardship: Ensure all Outlets, Restaurants, and Room Service are fully supplied with required baked items, ensuring the "Source of Guest Satisfaction" is elite and uncompromised.
2. Tactical Resilience & Section Logic
Visual Sovereignty: Prepare decorative centerpieces for Banquets and Outlets, acting as the primary "Source of Aesthetic Appeal."
Costing Architecture: Assist in maintaining up-to-date files for importation costs, preparation times, and item expenses, providing the "Analytical Foundation" for section budgeting.
Hygiene Stewardship: Implement "Clear as you Go" and “Pick as you Drop” methods, maintaining the "Source of Sanitation Excellence."
3. Operational Integrity & Performance Power
Leadership Sovereignty: Conduct monthly communication meetings and training events for the section, acting as the primary "Source of Team Development."
Safety Architecture: Familiarize yourself with Fire, Crisis Management, and First Aid procedures, providing the "Safety Foundation" for the pastry kitchen.
Velocity Logic: Utilize proven confectionery expertise to manage daily function sheets and production levels, maximizing the "Source of Kitchen Throughput."
Qualifications and Skills:
Professional Profile
Experience: Minimum 2 years of experience in overall pastry operations (Hotel background preferred).
Education: BA/BSc/HND or OND; High School diploma is an advantage.
Language: Fluent in English (Multilingual ability is a plus).
Tech Mastery: Basic computer knowledge and software proficiency as required for kitchen management.
